Ingredients:

  1. 3 eggs
  2. 1 cup of sugar
  3. 1 can of sweetened condensed milk
  4. 1 can of evaporated milk
  5. 1 tablespoon of lemon extract

Instructions:

  1. Preheat oven to 350°F
  2. Place flanera in a wide pan filled with water. The water should not pass the buckles on the flanera
  3. Place flanera and wide pan in the oven
  4. Blend the eggs, condensed milk, evaporated milk, and lemon extract together
  5. Make caramel from the sugar (see below)
  6. Remove flanera from the oven and pour caramel into the flanera
  7. Allow caramel to cool slightly before pouring egg and milk mixture into the flanera (avoids caramel splattering)
  8. Seal flanera and return it to the water bath
  9. Bake for 1 hour
  10. Remove flan from oven and leave it to cool to room temperature (avoids cooling too quickly and cracking the flan)
  11. Refrigerate overnight

Caramel:

  1. Under medium heat, allow a steel or nonstick pan to heat up completely (water droplets should immediately boil on the surface)
  2. sprinkle a light coat of sugar on the pan, allow it to melt completely before adding a new layer of sugar
  3. stir routinely with a rubber spatula to avoid burning
  4. use the spatula to lightly break up solid chunks of sugar
  5. lower heat if the caramel begins smoking
  6. increase heat briefly so pouring is easier

Serving:

  1. Run a knife along the edge of the flanera, separating the flan’s side from the walls
  2. Tip the flanera upside down onto a plate, holding the buckles back so they don’t gouge the flan
  3. Cut and serve with blackberries or another fruit of your choice
