Ingredients:
- 3 eggs
- 1 cup of sugar
- 1 can of sweetened condensed milk
- 1 can of evaporated milk
- 1 tablespoon of lemon extract
Instructions:
- Preheat oven to 350°F
- Place flanera in a wide pan filled with water. The water should not pass the buckles on the flanera
- Place flanera and wide pan in the oven
- Blend the eggs, condensed milk, evaporated milk, and lemon extract together
- Make caramel from the sugar (see below)
- Remove flanera from the oven and pour caramel into the flanera
- Allow caramel to cool slightly before pouring egg and milk mixture into the flanera (avoids caramel splattering)
- Seal flanera and return it to the water bath
- Bake for 1 hour
- Remove flan from oven and leave it to cool to room temperature (avoids cooling too quickly and cracking the flan)
- Refrigerate overnight
Caramel:
- Under medium heat, allow a steel or nonstick pan to heat up completely (water droplets should immediately boil on the surface)
- sprinkle a light coat of sugar on the pan, allow it to melt completely before adding a new layer of sugar
- stir routinely with a rubber spatula to avoid burning
- use the spatula to lightly break up solid chunks of sugar
- lower heat if the caramel begins smoking
- increase heat briefly so pouring is easier
Serving:
- Run a knife along the edge of the flanera, separating the flan’s side from the walls
- Tip the flanera upside down onto a plate, holding the buckles back so they don’t gouge the flan
- Cut and serve with blackberries or another fruit of your choice
